Deliciously Ella’s vegan mac and cheese recipe is comfort food at its most nourishing

To celebrate 10 years of Deliciously Ella, Ella Mills has shared her go-to recipe for a plant-based mac and cheese you didn’t know could exist.

We’re calling it: there is no better comfort food than one that contains both cheese and pasta. But when you’re trying to live more plant-based for the planet and prioritising nourishing veg-based meals for your body, the classic mac and cheese recipe has probably fallen off your recipe rotation. Until now that is.

This delicious dish from acclaimed vegan recipe creators Deliciously Ella involves a creamy sauce made from nutritional yeast – a rare plant source of B-vitamins that are crucial for mental and physical energy – and almond milk for a nutty, cheesy flavour. Simple macaroni is the perfect fast-acting carb source for post-workout refuelling, but the addition of tomatoes adds freshness and fibre to sustain that refeed for even longer. Comfort food that actually looks after you isn’t too good to be true after all. 

Deliciously Ella Tomato Mac and Cheese

Plant-based tomato mac and cheese

Serves: 4 

Total time: 20 minutes 

Ingredients:

300g macaroni pasta

200g cherry tomatoes, halved

4 cloves of garlic, peeled and diced

A large handful of fresh basil, chopped

50g nutritional yeast

400ml almond milk, plus extra if needed

50g tapioca flour

2 teaspoons of mustard, we use smooth Dijon mustard

Juice of 1 lemon

A pinch of salt

A drizzle of olive oil

Method:

Cook the macaroni pasta according to the instructions on the pack. Once cooked, drain and leave to one side until needed.

Make the white sauce by placing the tapioca flour, lemon juice, nutritional yeast, mustard, almond milk and a sprinkling of salt into a pan over a medium heat. 

Cook until the mixture begins to bubble, continuously whisking to ensure the mixture stays smooth and doesn’t form any lumps. You may want to add another dash of almond milk if the mixture ever becomes too thick.

Place another large pan over a medium heat and add a drizzle of olive oil. Once warm, add the chopped garlic, tomatoes and a sprinkling of salt. Mix well and cook for 10 minutes until the tomatoes become really soft and begin to bubble.

At this point, mix through the drained pasta, white sauce and chopped basil. Serve immediately.
