Typically, people use lettuce in the place of bread, but the culinary geniuses at Kroger opted for a protein-packed alternative: hard-boiled eggs.
The company has a recipe for a keto hard-boiled egg and bacon sandwich using the eggs in place of buns. The entire recipe is super simple and only requires a few ingredients: eggs, bacon, cheese, and avocado.
To whip them up, simply cut the eggs in half and top with small pieces of bacon, cheese, and avocado. Then, close the sandwich with the other egg half and hold everything in place with a toothpick.
These make the perfect grab-and-go breakfast. Even better, it’s super easy to meal prep these on Sunday for quick breakfasts throughout the week. Although Kroger opts to use eggs buns for a breakfast sandwich, these could easily serve as the “bread” for any type of sandwich, including beef burgers.
Other creative keto dieters have made egg buns with silicone molds for a DIY Egg McMuffin. That technique includes whisking eggs and cooking in a round mold to form buns. Add some sausage, cheese, and you’ve got an easy high-fat meal without hitting up the drive-thru.
